Vanilla extract is preferred but essence will do in a pinch. Either would be fine just ebar in mind that with extract you need half as much as with essence, since extracts are (usually) more pure. I hope this helps.

The pastry should be left in the fridge for at least half an hour (nearer 45 minutes) The sugar i added 100g of sugar but this is adjustable. The vanilla essence is far from essential so relax on that one. Gas mark 6 is about 180 degrees centigrade.
