There's a tragic irony to this fight. Most people do the Genocide route because they want to test their mettle against Sans. If he had offered to let the player fight him on the Pacifist Route, the best timeline would have been spared.

my headcanon is that this is a survival fight because sans is already spare-able from the get go, he just doesn’t want you to end the fight so early
