i personally like Walkerswood Jerk Seasoning (hot and spicy), however there is something about actually going to Jamaica and eating the real thing. It is amazingly different and tasty. I thought you did a pretty good job though.

when i make this i blacken the skin of the wings. once all done i put them in a bowl crush a lime over them with a sprinkle of salt if needed, toss the bowl. devour

I used 2 habaneros for my jerk sauce, but I use the same ingredients as you...except I add in 1/3 cup of vinegar. The 2 habaneros has a nice heat but not anything too overpowering. I plan on ordering pimento wood to have for the spring time since I live in NJ.

Pimento wood is really good for jerk pork but you don't need it for jerk chicken. Most of the jerk chicken cooked in Jamaica is done on a grill anyway.
